Firehouse Hot Wings
With the double excitement of football season and the baseball playoffs, many of us find ourselves in front of the tube for extended amounts of time enjoying the games. Although I may not be in attendance at a game, I still enjoy the “sport” of tailgating. There is something about spending an afternoon on the couch watching the game that is both thrilling and comforting. One of the things I enjoy most while in my couch potato mode is feasting on “fan foods.” I can’t think of a better way to experience the thrill of the sport other than actually being in the stadium.
Hot wings have always been one of my favorite fan foods. For me, those spicy drumettes symbolize a sports outing. Wings are available in as many variations as one can imagine: they can be fried, grilled, broiled or baked. Additionally, they come in varying degrees of hotness from mild to THAT’S HOT!
A few years ago, I decided to try my hand at cooking hot wings. My final recipe has taken numerous incarnations; my most recent is both HOT and healthy, traits that I now look for during my couch potato outings.
Enjoy this dish the next time you are in fan mode. The recipe below is VERY hot, but can be tamed to your taste buds by making a few minor adjustments. If you prefer a milder version, try cutting back on the amount of red pepper flakes and hot sauce. For an even healthier version, remove the skin from the chicken.
Ingredients:
1 tablespoon salt
1 tablespoon red pepper flakes
2 teaspoons of black pepper
2 teaspoons of poultry seasoning
2 tablespoons of hot sauce
12 chicken drumettes
Prep:
In a small bowl, combine the salt, red pepper flakes, black pepper, poultry seasoning and hot sauce. Stir until you have created a rub.
Place the drumettes in a storage container. Spread the rub over them (there will be extra rub) and work the rub into the skin. Place the container in the refrigerator for at least 1 hour to marinate.
Cooking:
Pre-heat the oven to 350 degrees.
Using a 9 x12 baking dish, lay the drumettes out, allowing the chicken skins to touch. Pour the remaining rub over the chicken, cover the dish with foil and place it in the oven.
Cook at 350 degrees for 35 minutes.
Uncover and cook an additional 15 minutes at 425 degrees.
Serving:
These hot wings are great just out of the oven or after cooling. Serve with Blue Cheese dressing for a cool topping to a hot dish.
